Martino Ruggieri, chef italien formé à l'Institut hôtelier de Castellana Grotte, remporte le Bocuse d'Or Italie en 2017 après huit ans comme chef exécutif auprès de Yannick Alléno au Pavillon Ledoyen trois étoiles à Paris. En octobre 2022, il ouvre Maison Ruggieri et obtient deux étoiles Michelin en 2024 avant de relocer au Palais-Royal.
